The pufferfish (family Tetraodontidae) has a superpower most animals can only dream of: when threatened, it gulps water and inflates into a spiky, round balloon three times its normal size โ€” too big and too painful for most predators to swallow. And if that doesn't work, it's carrying one of the most potent toxins on Earth.

How Do Pufferfish Puff Up?

Pufferfish have a highly elastic stomach and can rapidly ingest water (or air if out of water) to inflate to 3 times their resting size in seconds. Their spines, which lie flat normally, stick out when inflated. The combination of size, spines, and poison makes them almost impossible for predators to eat safely. Puffing up is exhausting and stressful for the fish โ€” they do it only as a last resort.

How Deadly Is Their Poison?

Pufferfish contain tetrodotoxin (TTX) โ€” a neurotoxin that blocks sodium channels in nerve cells, causing paralysis and death. It is 1,200 times more toxic than cyanide. A single pufferfish contains enough toxin to kill 30 adult humans, and there is no antidote. The toxin is concentrated in the liver, skin, and ovaries. Remarkably, the fish are immune to their own poison.

What Do Pufferfish Eat?

Pufferfish are carnivores โ€” they eat algae, invertebrates, mollusks, crustaceans, and shellfish. They have four fused teeth forming a beak-like structure powerful enough to crush shells and coral. Their name comes from this tooth structure (Tetraodontidae = four teeth).

Pufferfish as Food?

In Japan, pufferfish is served as fugu โ€” a luxury dish that costs up to $200 per serving. Chefs must train for years and obtain a special license to prepare it safely, removing the toxic organs without contaminating the flesh. Despite precautions, several people die each year from improperly prepared fugu.
